
Blueberry Orange Muffins
- 1-1/3 cups flour
- 1 cup oats
- 1/4 cup brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup fresh blueberries
- 2/3 cup milk
- 1/3 cup orange juice
- 1/4 cup vegetable oil
- 1 beaten egg
- 2 teaspoon grated orange peel
Grease muffin tin.Combine dry ingredients.Whisk together remaining ingredients except blueberries. Add to dry ingredients. Mix until moistened.Gently fold in blueberries. Fill muffin cups 2/3 full. Bake at 375 for 18-20 minutes. Makes 1 dozen.
