Turkey Enchiladas

Note: can use low/no fat cream cheese, sour cream and milk.

Preheat oven to 350 degrees. Cook onion in water until tender. Spray baking dish with Pam. In bowl, mix cream cheese, water and cumin. Stir in onion, turkey and spinach. Warm tortillas in microwave to soften. Spoon 1/4 cup turkey mixture into each tortilla, roll up and place seam side down in sprayed baking dish.

For sauce, mix soup, sour cream, milk and jalapenos. Pour over tortillas. Bake for 40 minutes. Place 3 thin slices of tomato on each tortilla. Sprinkle with cheddar cheese and cilantro. Bake for additional 5 minutes until cheese is melted.
