
Harvest Sweet Potato Soup
- 1 cup chopped celery
- 1/2 cup chopped onion
- 1 tbsp vegetable oil
- 3 sweet potatoes(~1#),peeled & cubed
- 3 cups chicken broth
- 1 bay leaf
- 1/2 teaspoon basil
- 1/4 teaspoon salt
Saute celery and onion in oil until tender. Add remaining ingredients. Bring to a boil over medium heat. Reduce heat and simmer 25-30 minutes until tender. Discard bay leaf. Cool slightly. Use blender to process soup in small batches until smooth. Return to pan and heat through.
