
Wild & Brown Rice with Cranberries and Almonds
- Prepare 4 servings of brown and 2 servings of wild rice acording to package directions.
- 1 Tbsp olive oil
- 2 carrots, chopped
- 1 celery stalk, chopped
- 1 small onion, chopped
- 1/2 tsp coarsely ground pepper
- 1/4 cup dried cranberries
- 1/4 cup slivered almonds (toasted if desired)
Warm olive oil in skillet. Add carrots, celery, onion and pepper. Cook 12-15 minutes until vegetables are tender and browned, stirring occasionally. Remove from heat. Add brown and wild rice and toss until combined.
